Euphie is essentially your typical princess: beautiful, charming, stubborn, sweet, and ridiculously naive.
She most likely led an extremely sheltered life within the palace until she left for Area 11. Almost everything she does indicates that she was not educated in the ways of politics, which seems strange for a princess. However, since she isn't really close in the line of ascension, it's pretty understandable. Another reason why she is so naive and sheltered is probably because despite having a ton of half-siblings, she also had a real sibling, her older sister Cornelia. Since she was her only little sister, Cornelia doted on little Euphie from the earliest. Despite her cold exterior, Cornelia really does care about Euphie, probably moreso than she cares about anyone else. In order to protect her from the harsh realities of the world, Cornelia sheltered the Third Princess. It can be inferred that pretty much all of her older siblings sheltered her as well, since she appeared to be relatively close to Clovis, Schneizel always accommodates her wishes and essentially regards her as one would a child, and Lelouch states that he loved dear sweet little Euphie more than anyone but Nunnally.
You don't often see Euphemia without a smile on. She's a really happy person, and tends to have an infectious personality. Euphie has an extremely big heart, and an equally open mind. It truly doesn't matter who you are or where you come from, chances are, Euphie will end up caring for you in some capacity. She fights for the rights of the Japanese and wishes to see violence eradicated so that a peaceful world in which Britannians and the Japanese can co-exist might be possible. To her, the happiness of her subjects comes before her own happiness, despite the fact that she constantly refers to her decisions as being selfish.
Euphie's also extremely impulsive. Not only does she jump out of a window onto a poor unsuspecting Suzaku below with absolutely no guarantee that said boy will indeed catch her -- she does so on purpose. She knows that this boy is the one that had only just been acquitted of murdering her brother -- and so she proceeds to do the clearly normal thing by jumping out of a window onto him so that she might be able to speak to him.
"Suzaku, the truth is... you and I, uh, that is... You see, I hereby command you to love me, and in return, I will love you forever!"
Another display of extreme impulse by Euphemia also happens to involve one Suzaku Kururugi. During her talk with Nina Einstein she realises that she's in love with him, and quickly decides that she has to let him know right away, despite the fact that he's engaged in combat at that moment. After her rather unconventional confession, Suzaku even tells her that everything she does is impulsive -- a fact which she readily agrees with.
On the other hand, Euphie definitely suffers from self-esteem issues, which might be part of the reason why she connects with Suzaku so easily. While she tries her hardest to see the best in people despite their wrongdoings, she fails to see the good in herself. When Suzaku steps down as her knight, her immediate thought is that he does it because it's become a burden for him. In reality, he does it because he remembers that he murdered his father as a child -- and doesn't see himself as worthy of being her knight.
Despite all of this, the only thing Euphie can say is: "You don't deserve it? Then I don't either.."
She's obviously not in the wrong here at all, so that fact that she beats herself up over Suzaku's own feelings of unworthiness certainly suggests some form of low self-worth. She also does this during a later conversation with Nina Einstein, in which the latter essentially talks the princess up while Euphie proceeds to do just the opposite. She claims that she's nowhere near as wonderful as people think -- that she's not as special as her brother and sister. After she demeans herself, Euphie proceeds to tell Nina that she should give herself more credit, which is pretty sad considering the princess can't seem to follow her own advice.
"A figurehead, that's all I was from the start. I knew that, but I thought if I gave my best effort, maybe I could make some difference."
She's not very politically adept, but she's been shown to possess a side which is undeniably commanding, brooking no arguments. This can be seen when she all but demands the guards restraining Nina for running after her car in an attempt to speak to her leave the girl alone. For the most part though, she's only a figurehead, and she does realize this, even coming to accept it at one point. This does nothing to her desire to establish a peaceful world, however.
Euphie is also extremely tactful and graceful, which reflects her role as a princess. She doesn't like stepping on people's toes, but will if it's necessary to defend someone she cares about. At times she may come across as clueless, but it's really just her naivety and cheerful nature coming out.
Despite her status as a princess, Euphemia likes to be treated like everyone else. She doesn't exploit her station in order to get people to do her bidding, and she doesn't use it to form bonds either. In fact, she prefers to be regarded as a normal girl as much as possible -- which is somewhat difficult considering she's a princess.
When she first meets Suzaku, she introduces herself not as Princess Euphemia, but simply as Euphie. They spend an entire day together and form a rather quick bond before he even discovers that she's of royal status. With her insecurities being the way they are, she likely does so out of fear that if people meet her as a princess rather than as just another girl, they'll only care about her status -- not about her as a person.
In addition to the happy, bubbly side, Euphie also possesses a serious side. While her political skills may not be up to snuff with Schneizel and her fighting isn't on par with Cornelia's, Euphie can be extremely brave, intentionally putting herself in harm's way in order to save someone else. This can be seen when she refuses to let the JLF harm the other hostages during the Lake Kawaguchi hotel jacking. Rather than standing by and watching someone else come to harm, Euphie blows her own cover and reveals her identity to the kidnappers, demanding that the other hostages be let go in exchange for her.
She further displays courage when standing down Zero right afterwards, showing no fear when he tells her of his plans for the royal family, even going so far as to confront him directly about Clovis' death. She also refuses to leave Suzaku on Shikine Island when Schneizel and the Avalon plan to blow the island up in order to trap and kill Zero. By disobeying direct orders and putting her life on the line once more, Euphie not only displays courage, but also extreme stubbornness. Essentially, she tends to place the lives of others as above her own, despite the fact that she is of royalty.
This stubborn streak grows as the season wears on, as the Euphie in the beginning tends to go along with whatever Cornelia suggests. By the time she chooses her Knight, Euphie has found a sort of resolve which allows her to make her own decisions, regardless of whether anyone agrees with them or not, and regardless of whether they are for her own good or not. Finally going against the wishes of Cornelia and the Britannian people in general, Euphemia chooses Suzaku, who is Japanese, as her personal Knight. This decision is key because it shows her resolve to finally do what she wants, and not what everyone else expects her to do. Her largest display of both stubbornness and independence, however, comes with the proposal of the SAZ, which is essentially contrary to the wishes of nearly the entire Britannian populace. She even goes as far as giving up her claim to the throne, and therefore any power, in order to do so. This decision also showcases the side of Euphie which is dedicated to the happiness of her people, despite calling the decision purely selfish.

+ By nature, Euphie's an inquisitive being. She wants to learn all she can about everything -- her people, Japan, and the world outside of the palace in general all interest her.
+ She's actually really brave -- willing to put her own life on the line for her fellow hostages during the Lake Kawaguchi jacking by blowing her cover and owning up to her royal status.
+/- The Third Princess is stubborn, perhaps to a fault. If she has it in her mind to do something, she's gonna do it, no matter what other people may think. This can be seen in her decision to take on Suzaku as her Knight, despite general disapproval from the populace and Cornelia.
+/- Her kindness is simultaneously one of her biggest strengths and greatest downfalls. It's a strength because it allows her to form bonds easily, but it's a weakness in that it allows her to be taken advantage of that much easier.
- Her self worth leaves a bit to be desired. She essentially tells Nina that she hates herself, and regards her decisions as purely selfish when in reality they're quite selfless -- such as her decision to give up her claim to the throne and the implementation of the SAZ.
